I know I'm just a rogue, but here's my two cent's worth (or how you want to put it):
You can heal as shadow specced, but you don't heal as much, since you'll loose a lot of the important talents. And we need you to heal as much as you can in the new bosses we will have to face (which there will always be until we have all Naxx on farm :)
About the druids, we have a bit too many feral ones in the guild atm. But a feral druid is imo good in the raid, because he can dps a bit and still have a combat res, innervation and a bit of healing. Where as a shadow priest doesn't really help in the same way, because he will run oom when dps'ing.
It's not just priests who are required to spec in a certain way. I think every class has some sort of restriction on their talent specs. At least rogues have too. Like no points in subtlety for sword rogues and 5 for dagger rogues.

You have joined a PvE guild with the goal of getting as far as we can in the raid instances. In this your role is to be a healer and as such you are expected to spec so that you can fulfill that role as good as possible...In return for this sacrifice you get epics and a chance to see places in the game you would otherwise not see...you can't have it both ways because if we let everyone spec as they might want it would severely hamper our PvE progress...imagine it: fury tanks, feral druids, dpsadins, dagger rogues, shadowpriests, fire mages....we wouldn't even be able to get rag down...
This is the reason....but you already knew that didn't you
