    Summer Recipes
    With the warm weather coming up I like to try new recipes that require little cooking. If you have some you would like to share post them here.

    This dressing is good with any combination of fruit.

    Fruit Salad Dressing

    2 Limes (Juiced)
    2 Lemons (Juiced)
    1 T Olive oil
    2 T Honey
    2-3 T Poppyseeds

    Mix wet ingredients till honey is dissolved then add poppy seeds.
    Toss over fruit and chill 2 hours before serving

    Wow, that sounds very citris-y


    I can make a good spud salad, butI don't know the recipie because I don't use one, I just know it in my head, but I'll try and list it.


    3-4 potatos
    2 tomatos
    3 hard boiled eggs
    Mayonaise. Can't say the quantity because you need enough to make sure the salad isn't dry at all.

    Dice the potatos and boil them just enough so they arent soft enough to become mashed spuds, so they're stil fairly firm. Put them in a bowl

    Dice the tomatos and slice the eggs, not too thin though, you want to be able to taste the egg when you get some. Put these in the bowl with the spud.

    Then just add the mayonaise until everything if fairly wet, usually takes me close to a litre, depending on the size of the other ingredients.



    Now that's how I make it, my dad makes it like that, kinda, but I think he adds more to it. So next time I talk to him, I'll find out how he makes it. His usually taste better, but mine taste nice as well.

    And you of course can add anything else you want.

    If its too sour add more honey I am not fond of things too sweet.

    That sounds like my potato salad, except I add celery, onion and a bit of dijon mustard. Thats the first time I've seen anyone add tomatoes other than me, ( I get odd looks) but I love them and my garden is usually overflowing with them.

    Myself, I prefer recipes with 5 ingredients or less..if they have more, I don't use them..

    BBQ Chilli Prawns

    Large uncooked green prawns (shrimp)
    Thai Sweet Chilli Sauce

    Cover prawns with sauce and stir, let sit while you have another beer, then put them on the BBQ for a few minutes, turning once..

    Eat..

    Piss easy :P

    Asian Soup

    6 cups chicken stock
    4 chicken breasts, sliced thickly
    2 tablespoons soy sauce
    100g *shrugs* rice noodles
    300g Bok Choy, (or other asian greens)

    Bring stock to the boil, toss in chicken, simmer till cooked (about 5 minutes) add sauce and noodles, cook till noodles are cooked (another 5-10 minutes) add bok choy and cook till bok choy just wilts, only a minute or so..

    serve..eat..

    Golden Syrup Dumplings (You could use Maple syrup)

    1 1/2 cups bakers flour
    2 tbls sugar
    60g butter (work it out :P )
    1 egg lightly beaten
    1/4 cup milk
    1 1/3 cups water
    1/3 cup golden syrup
    1/2 cup brown sugar
    1/2 tspn lemon juice
    60g butter extra

    Sift flour, add sugar, stir...combine butter, egg and milk and add to dry ingredients.stir till just combined..

    Combine water, syrup, sugar and juice and extra butter in a pan and stir over high heat till sugar is melted..

    Drop spoonfuls of the batter into the syrup, reduce heat and simmer on low for about 10 minutes, ladeling the syrup over the dumplings during cooking, until dumplings have risen and are cooked through..

    serve with ice cream....

    tortellini salad

    Cooled, cooked tortellini
    Red Vinigrette
    Sliced Black Olives
    Shredded parmesan
    some kind of cruchy veggie (I like cucumbers)
    Diced meat (like salami, pepperoni, etc)

    mix chill and eat

    potato salad

    potatoes, sliced and boiled till still firm
    miracle whip
    mustard
    sliced eggs
    paprika
    dill
    onions
    some tabasco if you like it spicy

    Mix (heavy on the mustard, light on the mayo)

    just keep adding until the proportion seem right and everything is wet

    Here is a great topping for ice cream or pancakes.

    I just throw it all together with no measuring, so I will guess for you.
    For my family of 4 I use

    6 bananas sliced
    1/4 cup brown sugar
    Enough butter to cover the bananas
    Rum

    Melt your butter in a sautee pan, add brown sugar stir until dissolved
    Toss in bananas cover well fry about 2 min. But watch the bananas make sure they don't start to break down, add rum then flambe .
    Serve right away.

    Its also good over french toast.

    A couple of years ago we had a cold steak dish that was amazing but I forgot what it was called. It was like a salad, I think it was a vinegrette type sauce and I remember snow peas and mandarin oranges but not much else. Anybody ever have anything similar :?:

    Fajita Kebab

    Pound of beef tips
    4 bell peppers, red, green, light green, yellow
    2 onions
    1/2 lb of mushrooms
    Fajita seasoning
    Salt
    Pepper
    Onion Powder
    Worcestershire sauce

    Put the seasonings, sauce and meat into a bowl and marinate for 24 hours. Chop the veggies and mushrooms and season for 6 hours. Alternate meat and veggies and mushrooms on skewers, grill for ten minutes on high. De-skewer and enjoy.
