Shir Pera
2 c. sugar
2/3 c. milk
1/4 tsp. salt
2 Tbsp. light corn syrup
2 Tbsp. butter
1/2 tsp. cardamom
1/4 c. pistachio nuts, chopped
1/4 c. walnuts, chopped

In a saucepan, cook milk, sugar, corn syrup and salt over medium heat, stirring occasionally, until sugar dissolves. Cook to 240 on a candy thermometer. Remove from heat. Add butter. Cool mixture to 120 without stirring. Add cardamom, beating vigorously until candy is thick and no longer glossy. Quickly stir in nuts. Spread mixture into a buttered pan. Let stand until firm. Cut into squares.


Here it is..the recipe where it's made with dry milk or milk powder..

In a large, heavy saucepan, mix together over low heat:

1/4 cup unsalted butter
1/2 cup milk
1/2 cup heavy cream (15% or 35%)
1/2 cup sugar
1 teaspoon cardamom
1/4 c. pistachio nuts, chopped
1/4 c. walnuts, chopped

Let boil, stirring frequently, until thickened (about 5-10 minutes).
Add:

2 cups powdered milk (enough powder for 2 quarts of milk)

Mix very thoroughly over low heat for 2 minutes, then remove it from the heat. The mixture will be very stiff and dry. Spread mixture into a buttered pan. Let cool until it can be handled easily then cut into squares
